  • 1 cup pecans

  • 1 pound brioche, cut into 1-inch pieces 12 cups
  • 5 tablespoons unsalted butter
  • 2 large Granny Smith apples —peeled, cored and cut into 1/2-inch pieces
  • 1 cups sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cups Calvados or other brandy
  • 4 large eggs, beaten
  • 3 cups milk
  • 1 vanilla bean, split and seeds scraped
  • Whipped cream or crème fraîche, for serving

  • 5 cups chicken broth
  • 3/4 cup apples,diced, unpeeled
  • 1½ cups Arborio rice
  • 6 tablespoons country ham, finely diced, pancetta or prosciutto can be substituted
  • 3/4 cup semi-fry hard cider
  • Asiago cheese for garnish
  • fresh sage leaves for garnish
  • freshly ground pepper to taste

Note:choose firm sweet-tart applese e.g. McIntosh, Stayman, winesap. Hard cider can be found in some super markets and liquor stores and is slightly alcoholic.

Course: 
  • 1 cup plus 2 tablespoons granulated sugar
  • 1/4 cup water
  • 1/4 pound (1 stick) unsalted butter
  • 1/2 cup heavy cream
  • 2 lemons
  • 6 to 7 baking apples (about 2 1/2 pounds)
  • 2 to 3 dashes Angostura bitters
  • 1/3 cup raw sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • Pinch freshly grated nutmeg
  • One grind fresh black pepper
  • 1/4 teaspoon kosher salt
  • 2 tablespoons unbleached all-purpose flour
  • 1/4 teaspoon flake sea salt, plus more for finishing
  • Egg wash (1 large egg whisked with 1 teaspoon water and a pinch of salt)
  • Demerara sugar, for finishing

Note: Use a combination of sweet and tart apples, Granny Smith and Golden Delicious make a good baking combination

  • 4 Ribeye (rib) pork chops, bone-in, about 3/4-inch thick
  • Salt and pepper
  • 3 tablespoons butter, divided
  • 2 apples, peeled, cored and thinly sliced
  • 1 large white onion, halved and thinly sliced
  • 2 tablespoons packed brown sugar
  • 2 teaspoons ground cinnamon
  • Pinch ground cayenne pepper
  • 2/3 cup apple cider

  • 1 tablespoon (1½ envelopes) unflavored gelatin
  • 2 cups apple juice, use 100% juice
  • 1 bag (12 oz) fresh cranberries, rinsed and picked over
  • 2/3 cup sugar
  • 1 Granny Smith apple, peeled, cored and chopped into 1/2-inch pieces
  • 1 medium celery rib,chopped
  • 1/3 cup walnuts, coarsely chopped
