For Soufflé:

  • 2 tablespoons unsalted butter, plus more for buttering soufflé dishes
  • 5 1/2 tablespoons sugar, in all
  • 1 tablespoon cornstarch
  • 1/2 cup whole milk
  • 1/2 cup semisweet chocolate, chopped
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 6 egg whites 

 

For Ganache:

  • 1 cup heavy cream
  • 1/2 cup semisweet chocolate, chopped
  • 1/2 teaspoon cayenne pepper (optional)
