Pineapple/Habanero Salsa:

  • 1 pineapple, about 3 ½ pounds, peeled, cored, and cut into ¼ inch rings
  • 1 orange or red habanero chile, dry-roasted, seeded, and minced
  • 1 sweet red bell pepper, cored, seeded, and dices
  • 1 tablespoon finely chopped fresh cilantro leaves
  • 1 tablespoon fresh lime juice

Course: 
  • 1 large shallot, sliced into very thin rings 
  • 3 tablespoons lime juice 
  • (about 2 limes) 
  • 4 teaspoons packed brown sugar, divided

  • ½ bunch of cilantro, chopped
