Makes a Great Gift

I get to do some pretty cool things in the everyday course of my job -- and our magazine subscribers get to live vicariously through me! 

We're in the final stages of shooting photography for our November/December issue; earlier this week we hung out for a while shooting at the chef's table in the kitchen at Commander's Palace. Over the weekend my friend Nina Camacho pulled together a group of friends and we staged and shot a New Year's Day buffet. (Many thanks to the NOLA Pie Guy for providing dessert.)

Next week we're going into the test kitchen at Emeril's Home Base to finish shooting the cover story. Later in the month we'll head to Baton Rouge to shoot on location, and that's just scratching the surface of what you'll miss out on if you're not a subscriber to the magazine

Steak with Parsley Sauce

I'm a long-time fan of the Lee Brothers, and this recipe is a classic example of why. The parsley sauce is the super-star of the recipe; its fresh flavor brightens up any cut of steak, but it also doubles as a great salad dressing, a marinade for chicken or shrimp, or as a spread on a roast beef, chicken, or turkey sandwich.

Mississippi Come-Back Sauce

This takes me back to my Mississippi roots, although it's spread all over the South these days. This sauce works on anything fried, most any sandwich, in place of remoulade sauce, as a crudite dip, and as a salad dressing. Add a little sweet pickle relish and you've got a kicked-up Thousand Island dressing. It's also good on Buffalo-style chicken wings. It keeps well in the refrigerator. Individual tastes vary, so experiment! It's so good, you'll "come back" for more.

Spicy Grilled Cheddar Burger

This was first featured in the Sept/Oct 2012 edition of the magazine, and takes the average burger to a new level with the addition of ground breakfast sausage to the mix. Note that the seasoned ground meat mixture also makes great meatballs, and a killer meatloaf.
