Welcome to Louisiana Recipes

 As anyone who knows me knows, I have an inordinate love for a good golf tournament, and, happy of happies, the semi-annual Ryder Cup competition between the US and Europe kicks off tomorrow. It will be held at Medinah Country Club outside Chicago, and it's no surprise that the restaurants in the area are playing it up. USA team captain Davis Love III and Europe's captain Jose Marie Olazabel have dishes named in their honor at the legendary Harry Caray's: the Davis Love III Shrimp and Grits, and the Jose Marie Olazabel Seafood Paella. They also have a cocktail on the menu called the Ryder Cup, and we present versions of these in the recipe section below for you to try. Great food, and great golf—you can call me Couch Potato this weekend

Each year Chef Duke LoCicero spearheads a group of people who dress in holiday costumes and distribute gifts and toys to seriously ill children, and children in difficult emotional and financial circumstances. His annual fundraiser is Saturday night, at Cafe Giovanni. Tickets are available at the door, and include over 40 different wines, great food, and support a great cause.

  Chef Devillier's Gulf Shrimp and Grits  
Gulf Shrimp and Grits

"Shrimp grits" started out as a humble pre-dawn breakfast for shrimpers in the Low Country. Grits were cheap and it stands to reason shrimp were plentiful on a shrimp boat, and simple versions of this dish come together quickly. Today, you can find  endless variations on the dish on menus across the country, in small town diners and upscale restaurants alike. Chef Justin Devillier of La Petite Grocery usually has some version on the menu; this one includes smokey bacon, shitaake mushrooms, Gulf shrimp, and creamy grits.

It is thought that the Moors brought rice to Spain around 700 A.D., and that classic Spanish paella evolved from rice pilaf, which in turn dates back to Persia in the 5th century B.C. And of course, we know that Spanish paella is the direct ancestor of Louisiana's beloved Jambalaya. The Spanish introduced tomatoes to the dish in the New World, because saffron was prohibitively expensive to import; Cajun jambalaya does not include tomatoes.

The paella recipe here combines classic Valencia ingredients with New World tomatoes and andouille sausage, and of course pulls seafood from our Gulf of Mexico.

We got a fleeting glimpse of cooler weather earlier this month, but the temps are back up into the high 80s and low 90s, necessitating plenty of Cold, Frosty Beverages. This one is perfectly refreshing, with a bit of Southern in the addition of tea and, essentially, lemonade.

There's not much more to say about it, except Cheers!
