Skin and debone chicken; chop into bite-sized pieces. Combine with green onions, bell pepper, celery, jalapeño, red onion, raisins, grapes, and cheese; mix together the mayonnaise and mustard and gently mix into chopped ingredients; taste and adjust seasoning (you should not need any salt). Add cooked pasta to make a heartier meal.
