Course: 
  • 1 pound macaroni
  • 1 pound pulled pork (your favorite or click here)
  • 1 cup barbecue sauce (your favorite or click here
  • 1 pint heavy cream
  • 2 teaspoons crushed garlic
  • 2 teaspoons diced shallots
  • 2 teaspoons fresh thyme leaves
  • 2 cups shredded cheddar cheese (about 8 ounces)
  • salt and pepper to taste
  • 1 tablespoon chile paste, sambal  olek preferred
  • ½ cup mayonnaise

For the crumb topping, combine:

  • 1½ cups panko bread crumbs
  • ¾ cup finely grated Parmesan cheese
  • 2 teaspoons fresh thyme leaves
  • ½ teaspoon crushed red pepper, or to taste
  • 1 tablespoon olive oil

  • Salt 
  • 2 cups/225g elbow macaroni  
  • 4 tbsp/55 g unsalted butter 
  • 6 thin slices prosciutto, cut crosswise into strips 
  • 1/2 cup/55 g panko bread crumbs 
  • 1 ½ tbsp all-purpose flour
  • 1 ½ cups/360 ml milk, warmed in the microwave
  • 1/3 cup/55 g crumbled goat cheese 
  • 1/3 cup/40 g freshly grated Parmesan cheese 
  • 1/3 cup/40 g shredded Gruyere cheese 
  • Pinch of freshly grated nutmeg 
  • Freshly ground black pepper

  • 1 tablespoon extra-virgin olive oil
  • 1/2 yellow onion, minced
  • 4 celery stalks, cut into small dice
  • 2 teaspoons paprika
  • 1 teaspoon cayenne
  • 1 teaspoon black pepper
  • 3 tablespoons Creole mustard
  • 1½ cups mayonnaise
  • 3 tablespoons red wine vinegar
  • 1 lemon, juiced
  • 1 teaspoon hot sauce or more to taste, Tabasco or Louisiana hot sauce
  • Kosher salt
