How to Make a Darker, Richer Stock

Roasting your ingredients for a bit before adding them to the water makes for a darker, richer stock. Stir in a little tomato paste with the browned ingredients, deglazing the pan with red wine, and adding a handful of dried mushrooms are all big flavor enhancers.
