Never overflow a glass of champagne

An overflowing glass of champagne is always festive, but wasteful, particularly if you're pouring a good vintage. The trick is to prime the glass.

Carefully pour enough in to fill the glass a quarter of the way full, wait for the bubbles to subside, then finish filling the glass. No overflow.
