Creole Style Okra

Side Dish

Serves 6

Ingredients: 
  • 1½ lbs okra
  • 1 tablespoon butter
  • 1 onion, minced
  • 1 garlic clove, minced
  • 1 green pepper, finely chopped
  • 3 tomatoes, peeled, seeded, chopped(reserve juice)
  • 1 teaspoon parsley, chopped
  • 1/2 teaspoon Tabasco
  • 3/4 teaspoon salt
  • freshly ground pepper to taste

Creole Style Okra

Method: 

Melt butter in large enamel-lined saucepan.
Add onion, garlic, green pepper and sauté over medium heat for 4 to 5 minutes until tender.
Add the tomatoes, their juice, parsley, Tabasco sauce and salt & pepper.
Add the okra, cover and simmer over low heat for 45 minutes or okra becomes tender.

Note: In this dish okra's flavor is enhanced by the traditional Creole vegetables and the splash of hot sauce.
