Bring a large pot of generously salted water to a boil over high heat. Add shrimp, bring to a boil, and cook 1 minute or until the shrimp are just cooked through. Drain shrimp and transfer to ice bath to cool completely.
Combine mayonnaise, lemon juice, and curry powder in a large mixing bowl; taste and add salt as needed. Add shrimp, pasta, and vegetables of choice and gently combine. Serve at once or refrigerate for several hours and serve chilled.
