Fried Okra

Serves 4 to 6

Recipe old standard

Ingredients: 
  • 4 cups okra (fresh or frozen is fine), sliced
  • 1 cup cornmeal, all purpose
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup vegetable oil, for frying

Method: 

Thaw okra if using frozen and place in bowl. Sprinkle the cornmeal over the okra. Add the salt and pepper. Stir well to coat each piece of okra with cornmeal.

Fill a large skillet with approximately 1/4 cup vegetaabe oil. Place over medium high heat. When oil is hot enough, using a slotted spoon dip the okra from the bowl into the oil. Cook until the okra is browned and crisp, stirring occasionally. Remove from oil with a slotted spoon and place on paper towel to drain.

Serve immediately while still hot.
