Quesadilla Bar

Ingredients: 
  • Flour tortillas

Suggested Fillings

  • Various shredded or crumbled cheeses
  • Refried beans
  • Grilled flank steak (find a recipe here)
  • Shredded roast chicken
  • Boiled or grilled shrimp
  • Pulled pork (find a method here; eliminate BBQ sauce)
  • Minced green onions
  • Minced cilantro
  • Minced garlic
  • Sauteed mushrooms
  • Grilled onions
  • Minced chilis

Method: 

Spread cheese as desired on one half of a flour tortilla, leaving just a little room at the edge. Top with additional toppings as desired; fold in half. Heat on a griddle, hot skillet, or grill until cheese melts and tortilla begins to brown; flip to brown other side. Cut into wedges and serve at once, with guacamole, red or green salsa, and sour cream.
