River Road Fudge

Serves a Crowd

Ingredients: 
  • 4 cups sugar
  • 3/4 cup water
  • 3/4 cup milk
  • 1/2 cup cocoa
  • 3 tablespoons butter
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • 1 1/2 cups pecans, broken

Note: Your favorite nuts can substitute for pecans e.g. macadamia, walnuts, peanuts, cashews or even a mix.

River Road Fudge With Pecans

 

Method: 

Boil sugar, water, milk, cocoa, and butter without stirring to 238F or until mixture forms a soft ball in cold water. Remove from heat and let stand undisturbed until lukewarm. Add salt, vanilla, and pecans (or your favorite nuts). Beat well (until it loses its gloss) and turn quickly into a buttered pan. Cool and cut into squares.
