In Louisiana we are known for our joie de vivre, or our joy for life. One of the most tangible ways we express our joy is through our cuisine. We enjoy bold flavors deeply rooted in tradition. Louisiana’s melting pot of cultures—French, Spanish, American Indian, Sicilian, African, Caribbean, Irish, German—has contributed to our dinner table. 

Seafood is one of our cuisine’s proudest traditions. Third- and fourth-generation fishermen work long hours on rich waterways to provide Louisiana Seafood that is superior in flavor, quality and variety and unlike anything found elsewhere. Our catch includes shrimp, blue crab, oysters, crawfish and finfish such as tuna, red snapper, drum and catfish. Each of these species is perfectly matched to the unique flavors found in Louisiana’s cuisine. From crawfish boils and shrimp etouffée to Oysters Rockerfeller and blackened redfish, our tables are teeming with variety. 

Louisiana’s fishery provides 8.5 million pounds of seafood each year and we want to share our wealth.
