Avoid greasy food when sautéing.

It happens to the best cook -- we try to cook healthy and skimp on oil when sautéing something delicious, only to discover that we have to add a bit more oil to achieve perfect results. But the dilemma is, adding cold oil to a hot pan is a sure route to a soggy, greasy mess. Try this: push the pan ingredients toward the center and quickly drizzle a thin stream of oil around the very edges of the pan. By the time it reaches the food in the center it will be hot; you can then toss pan contents and continue to sautéed perfection.
