Crawfish Nutrition

Crawfish are an excellent source of protein. Fat content of washed crawfish tail meat is only about 1% of the Recommended Daily Allowance (RDA.) Crawfish muscle fibers are shorter than the muscle fibers in red meats and , consequently, more easily digested. In 1994, The Louisiana Crawfish Promotion and Research Board conducted nutritional analysis of unwashed (fat-on) frozen crawfish tail meat. The purpose of that research was to develop a nutritional label that could be used by the entire industry. The information that was developed showed that a 3 ounce serving had only 2% total fat and 0% trans fat. There are no carbohydrates, sugars, dietary  fibers or saturated fat.
