BATON ROUGE, LA - Louisiana Feast of Fields: A Gastronomic Gala will be held on November 9, 2012 at 5 p.m. at Burden 4560 Essen Lane, Baton Rouge, LA 70809.  Students from LCI will be preparing a 5 course menu featuring local Louisiana agricultural and fishery products, under the direction of Chef Ryan Andre of Le Creole’.  The goal of the event is to showcase the quality and variety of products available from Louisiana farmers to local chefs, with the hope to inspire a relationship between the two.  Speaker will be Dr. Mike Strain of L.D.A.F., Louisiana Department of Agriculture and Forestry.
During reception from 5:00 p.m. to 6:00 p.m. chefs will team up with farmers and fishermen to showcase products that will be used in the menu.  There will be three action stations serving Chappapeela Farms duck rillettes crostinis, Louisiana charcuterie mix, and roasted local vegetable strudels.  Ponchartrain Vineyards will provide wine pairings for each course of the dinner menu.  Dinner will be served at 6:30 p.m. and feature the following menu, based around local Louisiana food products.

Vermillion Bay Sweet Shrimp Court Bouillon with Gueydan Popcorn Rice
Burnt Satsuma Sorbet Intermezzo
Seared Louisiana Duck Breast with Sweet Potato Au Gratin, Sautéed Bitter Greens, and Spicy Steen’s Glaze
Rice Imperial with Satsuma Caramel and Crispy Sweet Potato Chips
 
Producers were identified from Louisiana MarketMaker, a web based resource to connect farmers, shrimpers, fishermen, distributors and food suppliers to consumers.  With an intent to showcase Louisiana agricultural and fishery products, while also introducing local farmers and chefs to one another; the Louisiana Feast of Fields: a Gastronomical Gala hopes to foster new relationships, stimulate business for the local farmers and fisheries, and to generate proceeds to donate to Louisiana Culinary Institute and Burden.
