We all like the idea of a cheese-stuffed burger, but the reality is the cheese tends to leak out when molten and burn. The editors at America's Test Kitchen have devised a solution. Divide the meat you have allocated for each burger in half; shape each into a patty of a similar size. Place cheese of choice in center of one patty; fold sides over cheese to encase and form a mini-patty. Top with remaining patty, fold and tuck sides underneath; seal securely. Voilā! A hamburger bundle full of cheese.
