If you need cooked chicken for a recipe but don't have time to bake it, poach some chicken breasts. For two cups of cubed cooked chicken start with two whole medium chicken breasts (1 1/2lbs) halved and skinned or 3/4lb skinned and boned.
Place the chicken breasts in a large skillet with 1 1/2 cups water. Bring to a boil then reduce heat. Cover and simmer for 18 to 20 minutes (bone in) or 12 to 14 minutes boneless. Drain and cut into cubes.
