New Orleans Green Beans With Cheddar Cheese and Tomatoes

Serves 4

Ingredients: 
  • 1/3 cup onion, chopped
  • 1 green pepper, diced
  • 2 tablespoon butter
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 1/2 cup soft bread crumbs
  • 1 cup cheddar cheese, grated
  • 1 (16 oz.) can green beans, drained
  • 1 (16 oz.) can whole tomatoes, peeled

Method: 

In skillet brown onion and green pepper in butter. Mix flour with a little juice from tomatoes and add to onion and pepper. Add beans, tomatoes, salt and pepper. Cook until slightly thickened, stir occasionally.

Spoon tomato mixture into dish. Sprinkle with bread crumbs and cheese. Bake 10 minutes until cheese melts.

Serve immediately.

Note: To reduce the carbs leave out the breadcrumbs.
