Oven-Fried Deviled Chicken

Serves 2

  • Nonstick vegetable oil spray
  • ¼ cup mayonnaise
  • ¼ cup coarse-grained mustard
  • 2 teaspoons Worcestershire sauce
  • ¾ cup dry Italian-style breadcrumbs
  • 1 green onion, finely chopped
  • 4 large chicken drumsticks or thighs (about 1 pound)

Preheat oven to 425ºF. Spray a small baking sheet with nonstick spray.

Whisk mayonnaise, mustard, and Worcestershire sauce in a medium bowl. Whisk breadcrumbs and green onion in another bowl. Dip each drumstick in mayonnaise mixture; turn to coat. Dredge in breadcrumbs, turning to coat. Transfer to prepared baking sheet and bake until browned and cooked through, about 25 minutes.
