Roasted Carrots With Sage And Walnuts

Serves 8 to 10

Ingredients: 
  • 3 tablespoons unsalted butter
  • 2 tablespoons honey
  • 2 lbs baby carrots, bagged baby carrots found in produce
  • 1/3 cup walnuts, toasted and chopped
  • 1 tablespoon fresh sage, minced
  • salt and pepper to taste

Note: Be sure to purchase carrots in which the carrots look moist and uniform; dry-looking, split carrots are old and will taste bland.

Method: 

Adjust oven rack to middle position and heat oven to 475˚F. Place rimmed baking dish on rack and heat for 10 minutes. Microwave butter and honey in a bowl until butter is melted, about 1 minute.

Toss carrots with butter and honey mixture in bowl and make sure the carrots are covered. Spread carrots on the hot sheet. Shake sheet occasionally, until carrots are browned and tender, about 30 minutes. Return carrots to the now-empty bowl and toss with walnuts and minced sage. Season with salt and pepper to taste and serve.
