Roasted Cauliflower With Pine Nuts and Raisins

Serves 4

Ingredients: 
  • 1/4 cup golden raisins
  • 1 head caulifower (about 2 lbs)
  • 1/4 cup pine nuts
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme, chopped (if dry use 1/2 tsp.)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1 large garlic clove, pressed or minced
  • 1/4 cup panko (Japanese breadcrumbs)

Roasted Cauliflower With Pine Nuts and Raisins

Method: 

Preheat oven to 400˚F.
Cover raisins in hot water in a small bowl and let stand until plump, about 5 minutes. Drain.

Cut cauliflower into equal size florets. Toss florets, pine nuts, olive oil and thyme together in a baking pan. Spread in a single layer and season with salt and pepper.

Bake for 20 minutes until edges of cauliflower are carmelized and pine nuts are toasted. Remove from oven and raise oven temprature to broil.

Microwave butter with garlic in small glass bowl for 30 seconds. Stir in raisins and breadcrumbs. Toss raisin mixture with cauliflower mixtue in baking pan and spread into single layer.

Broil 6 inches from the heat for 2 minutes or just until golden.

Serve immediately.
