Sweet Potato and Chorizo Hash

Serves

Ingredients: 
  • 1 tablespoon olive oil
  • 3 tabelspoons green onion, minced
  • 1 1/2 cups diced sweet potato, blanched
  • 1 1/2 cups cooked chorizo sausage, diced
  • 1 cup roasted sweet potato, mashed
  • salt and pepper

Method: 

Add oil to a skillet set over medium heat; add onions and sauté until softened. Add remaining ingredients; stir to combine. Cook until heated through, about three minutes. Serve at once.
