Tuna And White Bean Salad

Serves 4

  • 2 (4-ounce) cans tuna packed in olive oil, drained
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 2 tablespoons red onion, minced
  • 1 tablespoon fresh parsley, minced
  • 1/2 teaspoon kosher or sea salt
  • 1/8 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 2 teaspoons red wine vinegar
  • 1/2 lemon, cut into 4 wedges

    Gently mix all the ingredients in a bowl except the lemon wedges. Allow the flavors to meld for about 15 minutes.

    Seerve and garnish with lemon wedges.

    Note: While this is excellent as is you can do a lot more with this basic salad. Serve on a bed of lettuce, add small cut Roma tomatoes or use your imagination.
