Remove the Fat from Any Stock
Submitted by susanThis tip is from Chef Paul Prudhomme's cookbook Fork in the Road. Refrigerate stock overnight. Pack a large mesh strainer with crushed ice or ice cubes and position it over a pot large enough to hold all the stock; carefully pour the stock over the ice in a steady, circling stream no thicker than a pencil. You may have to repeat the process once or twice.
