Stovetop Frying Basics

1. Select a deep, heavy pan — cast iron is ideal, as it retains heat well.

2. Keep a wire mesh spatter guard handy.

3. When working near hot oil, use oven mitts to protect from spatters.

4. Invest in a deep-fry thermometer; maintaining proper temperature is crucial.

5. Don't over-crowd the pan or your food will not develop a crispy crust

6. Use long, sturdy tongs to turn food.

7. Between batches, bring oil back to desired temperature
