As most home cooks know it is nearly impossible to always have fresh herbs on hand. Dried herbs are perfectly acceptable substitute as long as you keep in mind the dried version are much stronger. As a rule of thumb change tablespoons for teaspoons in your recipe. For example, should a recipe call for 2 tablespoons of fresh rosemary use 2 teaspoons of dried rosemary in its place.
