 It’s the second Annual LA Gumbo Master Seafood Gumbo Cook-off—you don’t want to miss this day of amazing food, fierce competition and loads of fun! The best in the industry will be judging LA Gumbo at its finest, so get your game face on and get ready to wow the judges and the crowd with your best pot of gumbo. Your competition will be bringing it—will you?

What LA Gumbo Festival Team Provides:

  • 5 pounds (70–90 count) shrimp, peeled and deveined
  • 4 pounds catfish fillets
  • 2 pounds claw crabmeat
  • 1 pound white crabmeat
  • 1 pound diced alligator meat
  • 1 pound Louisiana crawfish tails
  • 1 quart oysters
  • Produce 
  • 1½ pounds diced onions
  • ½ pound diced celery
  • 1 pound diced green bell peppers
  • ½ pound minced garlic
  • 1 pound sausage, sliced 
  • 1 pound sliced okra
  • 1 cup sliced green onions
  • 1 cup chopped parsley
  • 1 pound vegetable oil
  • 1 pound flour
  • 7 quarts – OR – 7 (32-oz) containers of Swanson’s shellfish stock
  • salt and cayenne pepper to taste
  • Baumhower Hot Sauce 
  • 4 oz. heat resistance Gumbo wide cups
  • Spoons

 Gumbo Masters

All Gumbo Masters will be judged by a panel of judges. There will be a preliminary judging followed by the final judging conducted by culinary professionals. 

  • 1st Place Gumbo winner: $1000
  • 2nd Place Gumbo winner: $500
  • 3rd Place Gumbo winner: $250

 

 PEOPLE'S CHOICE Trophy

All Gumbo Masters are encouraged to bring their family, friends and foes to the competition to purchase tickets toward their People's Choice award. Tickets will be available for $2 each or $15 for a book of 20 tickets. Each ticket is redeemable for a cup of gumbo. The ticket is to be placed in the participating competitor’s fish bowl. People’s Choice winners will be determined by people casting their votes with tickets they have purchased. The Gumbo Master Team with the most tickets at the end of the competition will win the prize!

 BEST BOOTH design

Each Gumbo Master Team is encouraged to decorate his or her booth in whatever theme chosen. Booth decorating can begin as early as 1:00 pm on Friday for the competition the next day. "Best Booth design" judging will begin at 10 am Saturday morning by an independent panel of judges.

 Chef John Folse

 Chef John Folse is the owner and executive chef of his Louisiana-based corporations including Chef John Folse & Company Manufacturing, White Oak Plantation and Chef John Folse & Company Publishing. He is managing partner with Chef Rick Tramonto of Restaurant Revolution in New Orleans’ historic French Quarter. Chef Folse is the author of numerous cookbooks, hosts a nationally syndicated PBS cooking show, A Taste of Louisiana, and a radio food and culture talk show, Stirrin' It Up with Chef John Folse. Finally, the Chef John Folse Culinary Institute at Nicholls State University is named in his honor. 

 Bob Baumhower

 Self-proclaimed “Head Fry Cook,” Bob Baumhower is the chief executive officer of Aloha Hospitality, the operating company for Baumhower’s Restaurant, The Compleat Angler Seafood Grille & Bar, Bimini Bob’s in Orange Beach and Victory Grille in Tuscaloosa and Auburn. With these four unique restaurant concepts, Baumhower owns and operates 12 restaurants across the state of Alabama. Previously, Baumhower played in the National Football League for the Miami Dolphins and the University of Alabama. He is a five-time Pro Bowler with the Miami Dolphins, member of the Miami Dolphins’ Ring of Honor and two-time All-American at the University of Alabama. His experience on the playing field have inspired Baumhower’s restaurants and provided the discipline and dedication to deliver the finest food and dining experience around.
