What Is Béchamel Sauce

Béchamel is a simple white sauce made from flour and butter (the roux) and milk. It is the base for a number of creamy dishes, including gratins, macaroni and cheese and creamed spinach. For proper béchamel, the flour must be adequately cooked to eliminate its raw taste and the milk must be slowly whisked in to prevent lumps.
