  • 1 teaspoon liquid crab boil 
  • 2 pounds small Louisiana shrimp
  • 1 pound bacon, sliced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 large yellow onion, chopped
  • 1/2 tablespoon black pepper
  • 1/4 pound salted butter
  • 1/4 cup Italian Seasoning
  • 1/2 tablespoon chopped garlic
  • 1 pound lump crabmeat
  • 1 cups seasoned bread crumbs
  • 2 cups grated parmesan cheese
  • 1/2 cup chopped green onions
  • Fresh shucked oysters, well drained

Course: 
  • 1/2 cup butter
  • 2 bunches green onions, chopped
  • 3 ribs celery, chopped
  • 3 cloves garlic, pressed
  • 2 14 oz. cans artichoke hearts, washed, drained and cut
  • 3 tablespoons flour
  • 1 1/2 to 2 quarts chicken stock
  • cayenne to taste (we like 1 teaspoon)
  • 1 teaspoon salt
  • 1/2 teaspoon fennel seed
  • 1/2 teaspoon fresh thyme
  • 1 cup parsley, chopped
  • 1 quart Louisiana oysters, chopped (reserve liquid)

Pasta

  • 1 pound of penne pasta or pasta of your choice
  • 1 cup yellow onion, chopped
  • 1/2 cup green onions, chopped
  • 6 tablespoons unsalted butter
  • 5 cloves of garlic, minced
  • 1/4 cup of dry white wine
  • 2½ tablespoons of a Cajun seasoning
  • 2 cups of heavy cream
  • 1/2 cup of grated pepper jack cheese
  • 1 cup of grated Parmesan cheese
  • Juice of 1/2 of a lemon
  • 20 fresh Louisiana oysters

Oyster Coating

  • Combine 1 cup of cornflower fish fry (any), ¾ cup of corn meal, and 1/2 teaspoon of Creole Seasoning

For the barbecue sauce

  • 1/4 cup plus 2 tablespoons mild-flavored Louisiana pepper sauce, such as Crystal brand
  • 1 tablespoon clover honey
  • 6 tablespoons clarified butter

For the oysters

  • canola oil, for deep frying
  • 2 cups seasoned flour
  • 36 medium-to-large oysters,* drained
  • 1 cup blue-cheese dipping sauce or salad dressing

  • 3/4 Cup melted unsalted butter
  • 2 Pound cornbread
