Festivals and events! I'm excited to see my friends in the tourism industry beginning to send me information about upcoming fairs, festivals, and events. On the Northshore, mark your calendars for next weekend: The Covington Heritage Foundation is hosting the Antiques & Uniques Festival (a free event) on the 17th and 18th "One man's junk is another man's treasure...". Down on the Bayou, the inaugural Bayou Terrebonne Boucherie is on the 17th. The family-friendly event includes a white bean cookoff component, the Cajun Olympics, and of course, live music. There are a few other events happening around the state; visit LouisianaTravel.com and enter the dates you're interested in being out and about. For this week's recipes, I've got my favorite, Louisiana Shrimp Tacos, then I excerpted two from a cookbook I picked up last weekend: Chef Melissa Martin's 2020 debut, Mosquito Supper Club. She grew up in Terrebone Parish, and the cookbook is packed with true, authentic Cajun food from the region. (I believe she'll be participating in the Boucherie linked above.). Enjoy the recipes below, stay safe and healthy, and, as always, let me know what's on your mind. Best regards,

Louisiana Shrimp Tacos Easy, healthy, best of all, DELICIOUS. This is the perfect light dinner for the warmer spring evenings we've been enjoying. The shrimp bath for just a few minutes in a salt and lime brine, and you'll be surprised at how much flavor this adds to the finished dish. |

Crawfish Stew Melissa Martin grew up eating the Real Deal Cajun food of Terrebone parish. She owns and operates the Mosquito Supper Club here in New Orleans, serving authentic food from Down the Bayou. This recipe is excerpted from her 2020 cookbook Mosquito Supper Club. Start to finish takes a while, but much of it is hands-off time, and the finished product will be well worth the time. |

Crawfish Hand Pies Building on the Crawfish Stew recipe linked above, these hand pies are sure to be a crowd favorite. The cookbook also provides a Lard Leaf Pie Dough recipe which is excellent, but your favorite pie crust recipe will work in a pinch. |
