I hate to shop, so many on my holiday list will be getting one of two cookbooks this year—my friend Poppy Tooker's recently re-worked and updated Madame Begue's Recipes of Old New Orleans Cookery (Pelican Publishing) or the recently released That Sounds Good, a cookbook compiled and self-published by the staff  and volunteers of WWOZ radio, featuring a history of the station, memorabilia and images as  well as recipes from some of Louisiana's most iconic musicians including Russell Batiste's "Rockin' Spaghetti," Dr. John's "Raccoon Stew," and Kermit Ruffin's "Barbecue Smoked Turkey." 

While I am just getting to know That Sounds Good and I have no intention of cooking that raccoon stew, the recipe for Kermit's turkey looks pretty amazing and I am eager to try it. He slathers the turkey with olive oil and Tony Chachere's Creole seasoning then injects it with a combination of crab boil and injection marinade before cooking it on the grill in a covered pan over hickory for four hours. That Sounds Good is available at the WWOZ website.

As for Poppy's book, which is available via her website and in bookstores everywhere,  it is fascinating to see her modern adaptations of Madame Begue's recipes, which are published adjacent to one another in the book. We all know culinary language and science have evolved radically over 100 years  but it is still quite something to witness this on the page while also observing the way our diets have evolved since the original book was published in 1900.

Smothered Greens

Smothered Greens with Bacon

I have been eating plenty of greens lately. Currently in season, they are cheap as can be, quick and easy to cook, and high in fiber, iron and nutrients with zero fat. At least they have zero fat if you do not smother them down in bacon drippings as I do. Either way, they still are very low in carbs, so that's a plus.
