Easy Smothered Mixed Greens

Serves 6 to 8

Ingredients: 
  • 8 to 12 ounces bacon, cubed
  • 1 large onion, cut in slivers
  • 2 tablespoons garlic, minced
  • Creole seasoning to taste
  • 2 cups water or chicken broth
  • 4 lbs greens (mustard, collard, kale, dandelion or a mixture), washed, stemmed and torn
  • vinegar, such as cider, cane, sherry or malt, for serving

Method: 

Render bacon in a large stockpot set over high heat. Add onion; cook until translucent, about 8 minutes. Add garlic; cook until fragrant, about 4 minutes. Add Creole seasoning and chicken broth or water; stir. Add greens in batches; adding more to the pot as the previous batch withers. Cover, reduce heat to medium; cook for 20 minutes until all greens are softened. Pass vinegar for serving.
