The weather still dominates the conversation here in New Orleans, with torrential rains and flooding this week instead of freezing temperatures. Hopefully it will clear up for the weekend's Mardi Gras festivities. It's not looking good for the first big parades next weekend, but that could change.

For the recipes this week, I selected a buttermilk fried chicken cobb salad first up; we try to have an entree salad for dinner one night a week, and this one fits the bill. Next, a classic veal milanese from chef Michael Chiarella. I ate at his Napa Valley restaurants several times; he passed away unexpectedly last fall. And finally, chicken parmesan, a dish I have loved since I first had it more than 30 years ago. Comfort food!

I'm a big fan of a substantial salad for dinner, once a week or so, and this one certainly fits the bill. The salad dressing will keep, refrigerated, for several days.

Veal Milanese

Veal Milanese with Salsa Rosa

This salsa recipe is a family recipe from Chiarella, and it makes a ton. He says there was a bowl on the table every night at dinner growing up, and that they made it in quantity in the summer and either froze or canned it for use all winter. Spoon it over any grilled fish or meat, toss with pasta, stir it into mayonnaise or hummus, etc.

Chicken Parmesan

I used to get chicken parmesan at The Fly Trap restaurant near our office in San Francisco. It's still there, but alas, the chicken parm isn't on the menu currently; I'll make this as a treat soon.
