Easy Shrimp Tacos

Serves 4

Ingredients: 
  • 1 pound peeled and deveind medium Louisiana shrimp
  • 1 tablespoon canola oil
  • 2 teaspoons chili powder
  • 1 teaspoon kosher salt
  • 8 flour or corn tortillas, warmed

 

Fresh Salsa

  • 1 medium ripe tomato
  • 1/3 cup finely diced white onion
  • 1/3 cup chopped cilantro
  • 1 tablespoon lime juice
  • 1 jalapeno pepper, minced
  • salt to taste

 

Creamy Coleslaw

  • 1 bag shredded coleslaw mix
  • 1/2 cup chopped cilantro
  • 3 tablespoons mayonnaise
  • 1 teaspoon distilled vinegar
  • 1 clove garlic, minced
  • 1 jalapeno pepper, minced

Method: 

Toss the shrimp with canola oil, chili powder, and salt. Set aside.

Warm a grill pan or nonstick frying pan over high heat. When the pan is very hot, add hthe shrimp and grill or sear, turning once, until bright pink and opaque throughout about 2 minutes per side. Transfer to a plate. To assemble, spread a little coleslaw on each tortilla. Divide shrimp among tortillas, then top with fresh salsa. Serve warm.

Salsa: combine all ingredients and set aside for 10 minutes.

Coleslaw: combine slaw and cilantro in a large shallow bowl. Combine remaining ingredients and add to slaw; combine and serve at once.
