Jamaican Jerk Burger with Orange Chipotle Mayonnaise

Serves 6

Ingredients: 
  • 1 cup mayonnaise
  • 3 tablespoons orange juice
  • 1 tablespoon minced canned chipotle chiles
  • 1 bunch green onions, coarsely  chopped
  • 1 tablespoon chopped fresh thyme
  • 1 habanero chili or 2 medium jalapeño chilis, seeded (optional) and chopped
  • 1 garlic clove
  • 1/2 cup vegetable oil
  • 1/2 cup soy sauce
  • 1 teaspoon ground allspice
  • 2 pounds ground beef (85% lean)
  • 6 hamburger buns
  • tomatoes, lettuce, onion, for garnish

Method: 

Mix mayonnaise, orange juice, and chipotle chiles; set aside.

Make the jerk sauce: Finely chop green onions, thyme, chiles, and garlic in a food processor; season to taste with salt and pepper and seat aside 3/4 cup.

Set barbecue grill to medium-high.

Shape ground beef into 6 patties; place in a single layer in a non-reactive baking dish. Pour 1/2 cup of jerk sauce over, turning to coat, and marinate for 20 minutes.

Sprinkle patties with salt and pepper. Grill to desired degree of doneness, about 4 minutes per side for medium.

Spread buns with orange chipotle mayonnaise; top with burger and garnish as desired. Pass reserved jerk sauce.
