Leftover Turkey Chili

Main Course

Serves 4

Ingredients: 
  • 2 tabelspoons olive oil
  • 1 cup chopped onion
  • 1 cup diced green pepper
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 1 can diced green chilies
  • 1 15-oz can diced tomatoes
  • 1 15-oz can kidney beans, drained
  • 1 lb turkey chopped into small pieces
  • 4 tablespoons chili powder (to your taste)
  • 2 tablespoons cumin  (to your taste)
  • salt and pepper, to taste
  • water, as needed

Method: 

Heat oil in a heavy 3-quart dutch oven. Add the onion, green pepper, and celery and sauté until translucent. Add the garlic and cook until fragrant.

Add the chilis, tomatoes, beans, and turkey. Stir in the chili powder and cumin and add water to barely cover, if needed. Bring to a simmer and taste for salt and pepper. Cook over medium low heat for 30 minutes to allow the flavors to meld.

Note: Additional garnish at the table, hot sauce, minced green onions, minced cilantro, sour cream, grated cheese.
