Louisiana Yam and Apple Stuffing

Stuff one turkey or two chickens

Ingredients: 
  • 4 cups diced, peeled apples
  • 1 cup chopped celery
  • 1 cup water
  • 8 cups mashed Louisiana yams (sweet potatoes)
  • 2 tablespoons lemon juice
  • 1 teaspoon cinnamon
  • 1 stick butter
  • 1 cup brown sugar
  • salt, to taste
  • 1 cup chopped pecans
  • 1 lemon rind, grated

Method: 

Simmer diced apples and celery in 1 cup water until just tender. Drain, reserving liquid.
Meanwhile, boil yams in water to cover, approximately 25 minutes. Peel yams and mash with lemon juice, cinnamon, butter, brown sugar, and salt.
Use apple liquid to moisten. Add apple, celery, pecans, and grated lemon rind.
Toss. Taste for seasoning.
