Tomato Basil Soup

Serves 6



  • 5 cups crushed tomatoes (boiled and peeled)
  • 4 cups tomato juice
  • 1 cup chicken broth
  • Fresh Basil
  • 1 cup heavy cream
  • ¼ lb butter
  • salt and pepper to taste


Tomato Basil Soup



Simmer tomatoes, tomato juice together over medium heat for 30 minutes.
Puree in small batches in food processor with 14 basils leaves.
Add small amount of lemon juice to taste
Heat through, being careful not to boil.

Serve hot.
