About Brining

Lean meats benefit from brining. A basic brine is 4 cups of water, 1/3 cup kosher salt, and about 2 tablespoons of sugar. Bring 1 cup of the water to a simmer and dissolve the salt and sugar in it; if you're using herbs, citrus, and/or aromatics, add them to the simmering water for a few minutes. Remove from the heat and add the remaining liquids (deviate from water with fruit juices, teas, etc.) and cool completely before adding the meat to be brined.
