Apricots, In Season in June and July

Apricots are highly perishable and 90% come to market in June and July. When purchasing apricots, look for fruit that is plump and rather firm. They should also be uniform in color, which can range from pale yellow to deep burnt orange. They can be stored in refrigerator for 3 to 5 days in a plastic bag.
