A member of the cabbage family and cousin to mustard green. It is the sulfur content it has in common with mustards that give it the pungent smell when cooking. The longer it cooks the stronger these flavors become.
Look for forets that are creamy whit and feel somewhat heavy for size. A serving of caulifolower contins almost a full days supply of vitamin C.
