Convection Oven Setting for Roasting Meats

If your goal is a caramelized, crisp crust on anything roasted, use the convection setting on your oven and set the temperature 25 degrees lower than the recipe instructs, and reduce cooking time by about 10%. The circulating dry air caramelizes the surface. This holds true for roasted vegetables and roasted meats.
