Cooking With Beer

Adding a little beer is an easy way to add subtle complexity to all manner of recipes, from meat to fish. Beware: cooking intensifies the flavor of beer, so a dark or bitter brew, although good for hearty beef stews, will overwhelm the flavor of more delicately flavored shrimp, for example. In that case a light or medium beer, like a domestic lager will add the right depth of flavor without overwhelming the dish.
