Bring a large pot of water to a simmer. Cut a shallow X into the bottom of each tomato to be peeled; drop into simmering water just until skin begins to peel back where cut. Immediately plunge into an ice water bath; when cool enough to handle, slip off and discard skin. Proceed with recipe.
