When you peel potatoes, they will start to discolor if they are left exposed to the air. Before you start peeling, fill your pot half way with cold water. Scrub the potatoes well and remove any eyes, green spots or blemishes with a pairing knife. As son as the potato is peeled drop into the pot of cold water. You can peel potatoes ahead of time and keep them refrigerated up to 8 hours before you cook them.
