Gathering Citrus Supremes

  1. Trim the edge of the fruit (orange, satsuma, grapefruit, lemon, lime) all the way to the juicy flesh.
  2. Repeat on the other side. You should now be able to sit the fruit on the board. You should also be able to see the flesh of the fruit.
  3. Hold a chef's knife at an angle to the fruit and cut it down, all the way to the bottom, starting from the curve on top. Turning the fruit as you work, remove all the skin and the pith at the same time, taking care that it is not cut too deep, thereby removing the fruit too.
  4. Use the knife to remove all of the remaining pith.
  5. Once all the skin and pith have been removed, hold the fruit above a bowl to catch the fruit juice as you work. Note the small membranes that separate the segments.
  6. Slice down along one side of the membranes with the knife. Slice down the other side of the citrus segment to remove the membrane. The fleshy part of the segment will come out, leaving the membrane behind.
  7. Repeat this on all sides, taking care to run the knife along the membranes.
  8. Squeeze the juice from the leftover membranes into the bowl. Discard the membranes.
  9. Use the supremes in salads or baked goods.
