I have had a great birthday week. Jim was more than generous, with dinner out every single night this week (although we got takeout Chinese Thursday night and watched the latest episode of The Pitt), then he really surprised me on my birthday with a really nice Apple watch. Now I need an Apple Watch for Dummies class!

For the recipes this week, first up a decadent shrimp and crawfish fettuccine. If you don't have access to crawfish, double the shrimp, or add some crabmeat! Next, a classic stuffed eggplant, from the classic Creole restaurant, Mandina's, in New Orleans' mid-city neighborhood.

And finally, an old recipe from recipes collected from the Times-Picayune for baked stuffed oysters. We had char-broiled oysters on one of our outings this week; to say we were disappointed would be an understatement! Try these instead.

Enjoy these recipes, stay safe and healthy, and, as always, let me know what's on your mind.

Best regards,

Shrimp and Crawfish Fettuccini

Shrimp and Crawfish Fettuccini

According to the crawfish report I heard early this week, crawfish season is going to be delayed a bit because of the cold weather, but it should start ramping up now. If you're buying frozen, just make sure you get the ones harvested in Louisiana. The imports taste foul.

Baked Stuffed Oysters

If you don't have access to oyster shells, bake these in muffin tins or individual ramekins. These will be perfect for noshing while watching the Big Game Sunday.
